Potato and leek soup

I’ve never had potato and leek soup. I don’t know why I’ve never tried this amazingly simple recipe that everyone else seems to have tried at some point in time.

Maybe it’s because I used to hate the idea of soups. Until 2 years ago, I shunned soup. Now? I love it!

I should qualify that – I love thick soups. I generally can’t be bothered with brothy soups. But, that’s mostly because I make soups for lunches and I like to have something filling without having to add a salad or sandwich to the side.

Anyway, on a whim I decided to try potato and leek soup for my lunches this week. It’s dead simple to make. There’s 5 ingredients. It’s easy to veganize (I used olive oil instead of butter and tofu-based sour “cream” instead of real cream or yogurt). And, it’s quick to make (30 minutes).

I halved the recipe I tried, from Mark Bittman’s How to Cook Everything Vegetarian, so I can make a fresh batch for the second half of the week. It made a huge amount – 2 very large servings for my lunches and a small-ish serving to eat for supper tonight.

The only thing I don’t like about it is that there’s no protein, so it’s not a complete meal. I think that I could add chickpeas without altering the flavour too much. But, for now I made Black Bean and Pan-Roasted Corn Salad, also from Bittman’s book. I’m salivating just thinking about it. It’s so freaking delicious. And, easy to make.

I’ve never pan-friend corn before, but I am definitely going to anytime I make a black bean and corn salad. This time I treated myself to corn on a cob and fresh lime. It makes a huge difference, but I think that it would still taste really good if you used frozen corn and bottled lime juice. It would also be less messy. When you use corn on the cob, you have to start by cutting the corn off the cob. There was corn juice everywhere. It looked like I murdered corn in my kitchen area. It was pretty hilarious.

Anyway, you wouldn’t think that the two, the soup and the salad, would go together but the soup is mild enough and the salad is delicious enough to make a great meal together.
